Step 4: Prepare your chicken
Discard innards and remove the neck from the chicken. Trim excess fat. On a cutting surface, place chicken, breast side down. Cut the chicken in half lengthwise along the backbone, cutting to but not through to the other side. Turn chicken over.
Starting from the neck cavity, loosen the skin from breast and drumsticks by inserting fingers and gently pushing between skin and meat. Generously rub the mixed spice under the skin.
Turn chicken over and rub the seasoning mixture all over including inside the cavity.
Step 5: Oil up your chicken
While your grill is warming up, place chicken breast down and rub a light layer of oil over the surface of your chicken. You can also spray over direct heat while cooking.
Step 6: Place your whole chicken on the grill
Once your grill has attained an optimum temperature, place your whole chicken on the grill rack. For a start, cover and cook for seven minutes. Turn chicken over and cook again for seven minutes.
Dependent on the size of the chicken, it will take between 45 minutes to 1.5 hours. Spend 1hour with chicken facing bone down and half an hour breast side down and half an hour breast side down.
Alternatively, grill until a thermometer inserted meaty part of the thigh reads 165°.
In case you don’t have a thermometer, you can make a slice in between the breast and leg and check the color of the juices. If they run clear, your chicken is ready. If the juices have a pink tint to them, keep your chicken in the grill a little longer.
You can make your chicken more flavourful by basting every 10 minutes or so with your favorite flavor or use lemon juice.
In addition, you can whip a home-made marinade with rosemary, olive oil, and garlic. If you don’t have much time, grab a bottle of Italian salad dressing and use it as a marinade alternative.
Remember to place a drip pan under the chicken to prevent the juices from dripping onto your unit.

Keep checking if your chicken is browning and looks good enough to munch. You’ll need to use an instant meat thermometer to check if your chicken is well cooked.
A sufficiently cooked chicken will read 165° F in the breast meat and 175 ° F in the thighs.
After confirming that your chicken is sufficiently cooked, transfer to a cutting board or let it rest in foil by carefully using a metal spatula and tongs.
Step 8: Serve
Let the chicken rest for 20 to 30 minutes before cutting.
